These attractive parfaits are a cool light finish to a meal.  Our two young children enjoy assembling them…and eating them, of course.   This recipe is “Diabetic Friendly”!!

Cherry Yogurt Parfaits

1 can (21 oz.) cherry pie filling, divided

2 cups (16 oz.) vanilla yogurt, divided

1 cup reduced-fat graham cracker crumbs, (about 5 whole crackers), divided

 

Combine 1 cup pie filling and one cup of yogurt; place about 2 tablespoons each in six parfait glasses.  Top each with 1-2 tablespoons of graham cracker crumbs, about 2 tablespoons pie filling and about 2 tablespoons yogurt.

Divide remaining cracker crumbs and pie filling/yogurt mixture between parfait glasses.        6 servings

Who can resist luscious chocolate and peanut butter paired up in a pie?  Reduced-fat and sugar-free ingredients lighten up the dessert without slicing into its satisfying flavor.  When I take this pie to gatherings, I always get an empty pie plate and lots of compliments in return.   * This recipe is Diabetic Friendly! *

 Chocolate Peanut Butter Pie Recipe

Chocolate Peanut Butter Pie

1/3 cup nonfat dry milk powder

1 ¼ cups cold water

1 package (1 oz.) sugar-free instant vanilla pudding mix

½ cup reduced-fat chunky peanut butter

1 reduced-fat graham cracker crust (8 inches)

Chocolate Layer:    1/3 cup nonfat dry milk powder

1 ¼ cups cold water

1 package (1.4 oz.) sugar-free instant pudding mix

1 cup reduced-fat whipped topping

½ oz. semisweet chocolate, shaved into curls

 

In a bowl, beat milk powder and water on low speed for 20 seconds.  Add vanilla pudding mix; beat on low for 1 ½ minutes.  Add peanut butter; beat on low for 30 seconds.  Pour into crust.

For chocolate layer, in a bowl milk powder and water on low for 20 seconds.  Add chocolate pudding mix; beat on low for 2 minutes.  Carefully spread over peanut butter layer.  Top with whipped topping and chocolate curls.  Cover and refrigerate for at least 2 hours.         8 servings

This dessert is very easy to make.  I have tried lemonade, mango and pineapple juice concentrates instead of orange, and my family loves every variety.  It’s nice to know that it’s low in fat and calories.  (This recipe is Diabetic Friendly!!)

Arctic Orange Pie

1 package (8 oz.) fat-free-cream cheese

1 can (6 oz.) frozen orange juice concentrate, thawed

1 carton (8 oz.) frozen reduced-fat whipped topping, thawed

1 reduced-fat graham crust (8 inches)

1 can (11 oz.) mandarin oranges, drained

In a large bowl, beat cream cheese and orange juice concentrate until smooth.  Fold in whipped topping; pour into crust.  Cover and freeze for 4 hours or until firm.  Remove from the freezer about 10 minutes before cutting.  Garnish with oranges.          8 servings
