Chicken Skewers with Spicy Cucumber Relish

This recipe, Chicken Skewers with Spicy Cucumber Relish, came from a recipe book that Stop & Shop supermarket handed out.  You can serve these skewers as a main course or as an appetizer for a crowd.  The Thai Chili sauce adds wonderful flavor: sweet, savory and with just a tiny bit of spicy.

Chicken Skewers with Spicy Cucumber Relish

1 red Pepper

1 lime

3 Tbsp. reduced-sodium soy sauce

3 Tbsp. sesame oil

¼ tsp. salt

1 ½ lb. chicken breast, cut into cubes

12 skewers

½ cucumber

½ oz. chives

2 Tbsp. cider vinegar

4 Tbsp. sweet chili sauce

 

Remove the stem and halve the pepper lengthwise, remove seeds and cut into small pieces.

Zest the lime; and put aside.  Then juice the lime; combine the lime juice, soy sauce, sesame oil and ¼ teaspoon salt in a shallow dish.

Thread the chicken cubes on skewers and place in the lime juice marinade.  Cover and let marinate for at least 1 hour in the refrigerator, turning once halfway through.

Grate the cucumber and to let drain in a sieve.  Press the cucumber down with a spoon to let as much of the moisture out.  Chop the chives and mix the lime zest, vinegar, chili sauce and cucumber.  Season with the rest of the salt and pepper.  Heat the grill; and grill the chicken skewers for 10 minutes until cooked through.          6 servings

Serve with Thai cucumber dip.

Peanut Ginger Pasta Recipe

 

Peanut Ginger Pasta

2 ½ tsp. grated lime peel

¼ cup lime juice

2 Tbsp. reduced-sodium soy sauce

2 tsp. water

1 tsp. sesame oil

1/3 cup creamy peanut butter

2 ½ tsp. minced fresh gingerroot

2 garlic cloves, minced

¼ tsp. salt

¼ tsp. pepper

8 oz. uncooked whole wheat linguine

2 cups small fresh broccoli florets

2 medium carrots, grated

1 medium sweet red pepper, julienned

2 green onions, chopped

2 Tbsp. minced fresh basil

 

Place the first 10 ingredients on a blender; cover and process until blended.  Cook linguine according to package directions, add broccoli during the last 5 minutes; drain.

Transfer linguine and broccoli to a large bowl.  Add remaining ingredients.  Add peanut butter mixture and toss to combine.        4 servings

Beef & Spinach Lo Mein Recipe

 

Beef & Spinach Lo Mein

¼ cup hoisin sauce

2 Tbsp. soy sauce

1 Tbsp. water

2 tsp. sesame oil

2 garlic cloves, minced

¼ tsp. crushed red pepper flakes

1 lb. beef top round steak, thinly sliced

6 oz. uncooked spaghetti

4 tsp. canola oil, divided

1 can (8 oz.) sliced water chestnuts, drained

2 green onions, sliced

1 package (10 oz.) fresh spinach, coarsely chopped

1 red chili pepper, seeded and thinly sliced

 

In a small bowl, mix the first six (6) ingredients.  Remove ¼ cup mixture to a large bowl; add beef and toss to coat.  Marinate at room temperature 10 minutes.

Cook spaghetti according to package directions.  Meanwhile, in a large skillet, heat 1 ½ teaspoon canola oil.  Add half of the beef mixture; stir-fry 1-2 minutes or until no longer pink.  Remove from pan.  Repeat with an additional 1 ½ teaspoons oil and remaining beef mixture.

Stir-fry water chestnuts and green onions in remaining canola oil 30 seconds.  Stir in spinach and remaining hoisin mixture; cook until spinach is wilted.  Returned beef to pen; heat through.

Drain spaghetti; add to beef mixture and toss to combine.  Sprinkle with chili pepper.        5 serving

Spicy Turkey Meatballs Recipe

Spicy Turkey Meatballs

Meatballs:   1 lb. lean ground turkey

¼ cup almond meal

¼ cup finely chopped onions

½ tsp. garlic powder

½ tsp. white pepper

1 egg

Sauce:   ½ cup water

3 Tbsp. distilled white vinegar

2 Tbsp. low sodium soy sauce

1 tsp. sesame oil

3 Tbsp. stevia in the raw

3 Tbsp. chopped scallions, plus more for garnish

5-6 dried chilies, chopped (most of the seeds removed, adjust according to heat desire)

2 tsp. freshly grated ginger

1 tsp. fresh orange zest

1 clove garlic, minced

 Mix the ground turkey, almond meal, onion, garlic powder and white pepper.  Add the egg and mix completely. Shape the meat into 24 meatballs and place on a baking sheet lined with greased foil.  Broil meatballs for 7-10 minutes or until well browned.  Remove from oven and set aside.

Whisk the water, vinegar, soy sauce, sesame oil and stevia in a medium sauce pan.  Heat over medium heat until it begins to thicken.

Add the meatballs and cover, letting the meatballs finish cooking through; about 8-10 minutes.

Sprinkle with additional scallions; then serve.

Sesame Chicken Skewers Recipe

Sesame Chicken Skewers

1 lb. boneless, skinless chicken breast, cut into chunks

2 red peppers, cut into chunks

2 cups button mushrooms

Marinade:   6 Tbsp. soy sauce

1-2 tsp. PENZEYS MINCED GARLIC

4 Tbsp. sugar

2 Tbsp. sesame or vegetable oil

½ tsp. GROUND BLACK PEPPER

2 Tbsp. WHITE SESAME SEEDS

½ cup chopped onion (1 small onion)

Place the chicken chunks in a zip-top bag.  In a bowl the marinade ingredients and mix well.  Pour into the bag with the chicken and marinate for a few hours.  Remove the chicken from the marinade and thread onto skewers with bell peppers and mushrooms.

Grill or broil over medium heat, about 5-7 minutes per side.  The marinade will blacken if the heat is high, because of the sugar in it, but it will still taste great!

Many times I’ve taken this dish to church dinners and I’m always asked for the recipe.  It’s a super appetizer for any gathering.

                                                                                                 

Sesame Chicken Wings Recipe

Sesame Chicken Wings

½ cup soy sauce

1/3 cup water

¼ cup sugar

2 Tbsp. sesame or olive oil

4 green onions with tops, sliced

½ medium onion, sliced

2 garlic cloves, minced

1 to 2 Tbsp. sesame seeds

Dash pepper

2 ½ Lbs. chicken wings

 

In a large plastic bag or glass dish, combine the first nine ingredients.  Add chicken wings; coat well. Cover and refrigerate 2-3 hours or overnight, turning occasionally.  Remove chicken to a shallow rack in baking pan; discard marinade.

Bake, uncovered, at 350 F. for 30 minutes.  Turn and bake about 20 minutes longer or until tender.  

6-8 servings
