I don’t remember where I had gotten this recipe for Roasted Cauliflower, but it’s going to be on my shopping list for Thanksgiving.

 

Roasted Cauliflower Recipe

 

Roasted Cauliflower

1 Tbsp. vegetable oil

1 head cauliflower

1 ½ cups plain Greek yogurt

1 lime zested and juiced

2 Tbsp. chile powder

1 Tbsp. cumin

1 Tbsp. garlic powder

2 tsp. kosher salt

1 tsp. pepper

 

Preheat oven to 400 F. and lightly grease small baking sheet with vegetable oil; set aside.

Trim base of cauliflower to remove any green leaves and stem.

In small bowl, combine the yogurt with zest and juice, chile powder, cumin, garlic powder, curry powder, kosher salt and pepper.

Dunk the cauliflower into a bowl and use a brush or hands to smear the marinade evenly over surface.  (Excess marinade goes in the fridge in airtight container for up to 3 days, to go on meat or veggies).

Place cauliflower on baking sheet and roast until surface is dry and lightly browned, 30-40 minutes.  The marinade will make a crust on surface of cauliflower.

Let cauliflower stand to cool for 10 minutes before cutting into wedges and serving alongside a big green salad.

Cracklin’ Wings Recipe

24 whole chicken wings

1 cup flour

1 tsp. garlic powder

½ tsp. celery seed

¼ tsp. ground chipotle pepper

½ tsp. salt

½ tsp. pepper

Optional:   ½ cup butter

4 ½ oz. hot sauce (Frank’s)

1 Tbsp. white vinegar

1 lime, juiced

 

Wash chicken wings and pat dry.  Separate drummies from paddles, and cut off wing tips.

In 2 cookie sheets with foil and spray with nonstick cooking spray.  Put flour, pepper, garlic powder and salt in ziplock bag; shake to mix.  Add wing pieces, a few at a time, and shake to coat.  Put flour-coated wings on foil-covered cookie sheets.  Bake in ore-heated 375 F. oven to 1 ½ hours, moving wings pieces around after 45 minutes so they won’t stick to the foil.

When wings are done, melt butter in medium saucepan.  Add hot sauce, vinegar, and lime juice.  Turn off heat.  Toss wings with sauce; and serve.

Lime and Cucumberita Recipe

Lime and Cucumberita

½ cup chopped English cucumber

1 ½ oz. (3 Tbsp.) premium tequila

1 oz. (2 Tbsp.) Triple Sec

¾ tsp. finely shredded lime peel

1 Tbsp. lime juice

1 ½ tsp. sugar or sugar substitute equivalent to 1 ½ tsp. sugar

Ice

Lime juice

Coarse salt

Thin slice of lime

In a blender combine cucumber, tequila, Triple Sec, lime peel, 1 tablespoon lime juice, and the sugar or sugar substitute; add about 1 cup of ice.  Cover and blend until cucumber and ice are thoroughly blended and crushed.  If desired, rim a margarita glass with additional lime juice and dip rim in coarse salt.  Pour blended mixture into a margarita glass.  If desired, garnish with thin lime slice.

Nonalcoholic Lime and Cucumberita:  Prepare as directed, except omit the tequila and Triple Sec and ADD ½ cup lemon-lime carbonated beverage and ¼ cup orange juice.
